"Kagianas” (scrambled eggs of Kalamata)

• eggs (4)
• salted ham - smoked pork,
traditional Kalamata product(200gr)
• ripe tomatoes (8-10)
• olive oil
• salt & pepper
• sugar
• fresh oregano

Grate the tomatoes and put them in a deep frying pan.
Add olive oil, salt, pepper, oregano and sugar and simmer the sauce.
During the cooking add the ham cut in big pieces.
When the sauce starts to thicken, add the beaten eggs.
Stir lightly and when the eggs get done remove from the fire and serve.

Kids’ participation
It is suggested, always at the discretion of the parent or responsible adults and depending on the kid’s age, that children participate by grating the tomatoes, seasoning and beating the eggs.
