Zucchini “strapatsada” (scrambled eggs)

Ingredients
• eggs (5)
• zucchini (4 medium sized)
• potatoes (2)
• onion (1)
• green pepper (1)
• tomatoes, grated (3)
• feta cheese
• olive oil
• salt & pepper
                                                                   • oregano

Execution
Slice the zucchini, salt them and leave to drain.
Fry them and leave them on absorbent paper.
Cut and salt the potatoes, fry them and leave them on absorbent paper.
Saute the onions and peppers.
Add the tomato, pepper, oregano and a little salt and cook until all the liquids have evaporated and only the oil is left.
Add the zucchini and potatoes, stir and spread them.
Beat the eggs with some salt, pour them over the mixture and mix them using a spoon, making sure the eggs are evenly spread, also under the potatoes and zucchini.
When the bottom turns golden brown, turn it upside down.

Kids’ participation
It is suggested, always at the discretion of the parent or responsible adults and depending on the kid’s age, that children participate by beating the eggs, adding the vegetables and seasoning.
